Step cooking
- To prepare the butter dough, you must definitely cook the dough. We heat milk of any fat content so that it is warm.
- Knead 60 grams of yeast into a small crumb in a separate container, mix them with one tablespoon of sugar, pour 150 ml of warm milk there, mix thoroughly with a tablespoon until smooth.
- Sift through a sieve half a glass of flour, add to a bowl with milk and yeast. It is necessary to sift the flour in order to be saturated with oxygen, then the dough will be better suited. Again, mix the mixture until thick sour cream.
- Cover the resulting dough with cling film or a kitchen towel, set in a warm place for 20 minutes.
- While the dough is coming, we’ll prepare the bun for the dough. Pour 5 tablespoons of sugar, half a teaspoon of salt, a bag of vanilla sugar into a bowl, mix everything.
- Add 100 grams of margarine pre-melted in the microwave, mix with a spoon until completely homogeneous.
- We drive 4 eggs completely into the bowl with baking, and from the fifth egg we take only the protein, separate the yolk into a small container, it will be needed for lubrication if you bake pies.
- We mix this mixture with a whisk until smooth.
- Opara rose, increased in volume. Now we add the muffin just cooked into it, the remaining 150 ml of milk, half a teaspoon of salt, mix until the ingredients are completely dissolved and uniform.
- Gradually we begin to add flour, sifting through a sieve.
- Add flour in small portions, mixing the dough to achieve the desired consistency. When the dough is almost kneaded, add two tablespoons of unrefined vegetable oil to it, continue to knead the dough until the oil is absorbed.
- Then put it on the table, continue to knead another 5-10 minutes until the dough becomes homogeneous.
- Then we put it in a container, grease it with hands moistened with vegetable oil, on all sides, cover the bowl with a towel, put it in a warm place for 20 minutes to fit.
- After 20 minutes we take out the dough, knead it well, make a spherical shape, again send it to a warm place for 30 minutes. After that, the dough will be ready. From it you can bake pies, pies, pastries, wedding cones, Easter.
Useful Tips
- Two hours before making the dough, lay eggs, milk, margarine from the refrigerator - all ingredients must have room temperature.
- For baking, you can use cane sugar, it will give the product a caramel flavor.
- When preparing muffins for dough, you can add lemon zest, nutmeg, cinnamon.
- If you replace margarine with butter, this will not spoil the taste and quality of the dough.
- Do not be lazy to sift the flour, this contributes to the enrichment of oxygen: the dough will be airy, malleable.
- Use only proven yeast, those that were previously used, you know their quality.
