Step cooking
- Pour 230 ml cream of 20% into a deep bowl, heat them to a temperature of 40 degrees.
- Add 30 g of pressed crushed yeast or 11 g of dried yeast. Add two teaspoons of sugar, mix well.
- Sift twice 150 g of flour and add to the cream with yeast, mix until smooth.
- Cover with cling film and leave to approach in a warm place for about half an hour.
- During this time, prepare the baking. 4 eggs and one egg yolk are driven into a mixer bowl or a deep bowl. We leave one protein to create a glaze.
- Pour 200 g of sugar to the eggs, 1/3 tsp. salt, beat with a mixer.
- Add 10 g of vanilla sugar, 150 grams of soft butter, whisk with a mixer. If desired, for the aroma, you can add one teaspoon of saffron or orange mass.
- Add the suitable dough to the eggs and mix with a spatula or dough mixer.
- Sift twice 550 g of flour and gradually add to the mass, knead the dough.
- The finished dough will be thick, viscous, well behind the walls of the bowl. We cover it with cling film and send it to a warm place. You can put it in the oven by setting the temperature to 35-40 degrees.
- At this temperature, the dough will increase 2.5 times. The main thing - do not put it on the battery, so as not to cook. Can be placed near the battery without touching it. Or wrap with several towels, leaving a small hole for air to enter the mass.
- After the dough rises, you can add raisins, candied fruits to it. If you plan to use raisins as an additive, wash it well first, fill it with hot water and let it swell for 15 minutes. After that, put in a colander, let the water drain. Put on a paper towel to remove excess water. Then sprinkle with flour. Due to this, raisins are evenly distributed over the dough. You can add candied fruits or nuts. Add half as much nuts as raisins, because they plant dough.
From this test you can bake Easter cakes, rolls. Bake at a temperature of 180-200 degrees 40 minutes. After that, take out the finished baking, let it cool down a bit, remove from the mold. Fill cakes with icing and sprinkle with confectionery colored sugar. Buns can be sprinkled with powdered sugar.
