Step cooking
- Pour 250 milliliters of fresh milk into a deep bowl, add 25 grams of fresh yeast mashed with fingers into it and stir well with a whisk.
- Add 2 teaspoons of vanilla sugar and a little flour, about 150 grams, and mix everything well.
- Break 2 chicken eggs into a separate bowl and beat well with a whisk.
- In a bowl with eggs, add 100 grams of sugar, mix a little, then add a pinch of salt and mix everything well again.
- Add 100 grams of previously melted butter to the eggs. Make sure that the melted butter does not turn out to be hot, as eggs may curl from heat.
- Pour 0.5 teaspoon of nutmeg.
- Mix everything well and combine with the milk mass.
- Stir and gradually add the remaining 450 grams of flour through a strainer without stopping mixing.
- When the dough thickens well, knead it thoroughly with your hands. The dough should turn out light and stick well from the bowl.
- We take a separate bowl, slightly moisten it with sunflower oil and also slightly wet our hands.
- We put the dough in a clean cup so that it fits. We cover the bowl with the dough with a kitchen towel and leave to approach for 1 hour.
- Next, you need to release all carbon dioxide from the dough, for this you need to knead the dough - roll the dough from the edge into the middle in a circle.
- Cover the dough with a towel and leave to rest for another 1 hour. During this time, the dough should increase 3-4 times in size. You can bake products!
Housewife tips
- If there is no butter at hand, it can be replaced with margarine or even liquid vegetable oil, but odorless.
- It so happens that for some reason the dough rises poorly or does not rise at all. Do not worry, try adding 1-2 tablespoons of confectionery baking powder to it.
- To make the buns even tastier, add raisins, dried apricots or any other dried fruits to the dough.
- To add an unusual taste to the dough, you can add a few spoons of cocoa or even melted chocolate.
- Yeast dough can be cooked completely without eggs, just replace them with sour cream or butter, comparable in volume.
- If the dough burns on top during baking, then cover it with special baking paper or turn off the top heat.
- Pressed yeast is much slower than dry yeast, but the aroma of baking from them is deep.
