Step cooking
- First you need to thoroughly rinse and dry all the vegetables. Next, cut the tomatoes into small cubes. Sliced tomatoes are transferred to a large pan.
- Peel the carrots and cut into small pieces. We shift the chopped carrots to the tomatoes.
- Sweet bell pepper is cut in half, remove the stalk and seeds, and then divide into several parts. Pepper is also sent to the pan to the rest of the ingredients.
- Next you need to peel hot pepper. Since it is often very vigorous, and washing it off with hands is quite problematic, it is better to perform this procedure with gloves. Hot pepper seeds are optional. Cut the stalk and then cut the pepper into round slices. Sliced hot pepper is transferred to the pan to sweet pepper, carrots and tomatoes.
- After that, all vegetables need to be chopped. This can be done using a submersible blender or grind them through a meat grinder using a fine grill.
- We put the chopped vegetables on a strong fire and bring to a boil. After adjika has begun to boil, reduce the heat and cook it for at least 1 hour. If you plan to roll this adjika for the winter, you can boil it a little longer.
- While adjika is boiling, peel 2 heads of garlic from the husk and also chop it either with a blender or by passing through a meat grinder. Optionally, you can use the garlic press.
- After an hour, adjika should boil and become quite thick. Add sugar, salt, seasoning for adjika, vegetable oil, vinegar, and mix everything thoroughly. Boil adjika for another 5-10 minutes. We shift the finished adjika into jars and close the lids. If you can preserve adjika for the winter, the banks must be sterilized. Lids also need to be boiled. In addition, such adjika can be stored simply in the refrigerator, and added to dishes as needed. Enjoy your meal.
