Step cooking
- In a pan with a capacity of 1 liter, boil hard-boiled (8-10 min.) 4 eggs, pour them with cold water for several minutes. Peel, cut into strips and add a little salt (1 pinch of salt).
- Boil 1 liter of water in a 2-liter pan, add 1 tsp. salt. Prepare 400 g of green beans: first you need to peel, cutting the stem, and if possible removing the middle vein, and cut into equal pieces 2.5-3 cm long. Frozen beans are mainly sold already peeled and cut. Dip the beans in salted boiling water and cook after boiling: fresh 5 minutes, frozen - 8 minutes. Beans should become soft, but stay a little crispy. Fold in a colander and pour over cold water.
- Peel and rinse 1 onion, then cut into thin quarters of rings.
- Peel and chop the garlic with a knife, garlic press or grater.
- In a pan, heat 2-3 tbsp. l olive oil and fry the onion until soft and light golden hue. Add garlic and fry together for 2-3 minutes. Put the beans in a pan and cook for another 5-7 minutes, often stirring, so that the vegetables are fried evenly and not burnt.
- To make the aroma of the dish more saturated, you can add spices. Thyme, coriander, parsley, basil, dill are well combined with green beans. For sharpness, you can put a little pepper - black or red.
- Transfer the fried vegetables to the salad bowl, add the chopped eggs and 2-3 tbsp. l sour cream (the ingredients should not be very hot so that the sour cream does not curd). Also, as salad dressing, you can take as much yogurt (without additives).
- Mix the salad, decorate with herbs and can be served - both in warm and in cold form. Enjoy your meal!
Useful Tips
- Choose green beans of even light green color, without brown and yellow spots, elastic, not sluggish.
- To determine its freshness, break the pod. If it breaks into two separate halves with a crisp crunch - this is a fresh vegetable. If it is difficult to break it, and the parts remain interconnected by fibers, it means that the beans have been torn for a long time or overripe.
- Asparagus (chilli) beans can be added to soups and borschs, make stews, omelets, casseroles with it. It can be canned and frozen.
- Before freezing, the beans are well washed, cleaned from stems and veins, cut into pieces 2.5-4 cm and blanched in boiling water for 4-6 minutes. Then they are thrown back into a colander, allowed to drain well and completely cooled, laid out in containers or bags for freezing and sent to the freezer. Frozen asparagus beans can be stored for 6-7 months.
