Step cooking
- Cooking dressing: 1 tbsp. l mix lemon juice with 1 tsp. vegetable oil. The most delicious option is extra virgin olive oil. Alternatively, for piquancy in the sauce, you can add 0.5 tsp. mustard.
- Salt and pepper the dressing. Mix everything until smooth.
- Wash a bunch of fresh spinach, dry the leaves on a board or paper towel, and chop coarsely. Crispy and fresh spinach perfectly shades the taste of red fish. Another suitable combination with fish greens is lettuce leaf lettuce. Put the greens in a salad plate: this will be the first layer.
- Peel half an orange, divide into slices. We remove a white film from each slice so that only the flesh remains.
- We cut each slice across into 4 - 5 pieces. Sliced orange slices lay in a salad plate on top on spinach leaves.
- Cut 50 g of slightly salted salmon into medium cubes and add to the rest of the products. I must say that fresh salmon can be quickly salted at home on their own. The salting out process takes about an hour. To do this, put the pieces in a container with a lid, sprinkle heavily with salt, and pepper. Then the container is closed, shaken several times and left closed for 50-60 minutes at room temperature. After this time, the salted pieces are taken out and used as a salad ingredient.
- Wash and finely chop 2 green onions along with the white bottom.
- Sprinkle salmon with onion crumbs. If you have other herbs in your house, for example, parsley, you can also cut it into a salad. Take 20 g of almonds, chop them with a knife and also send them to the salad. Sesame seeds can be a substitute or addition to almonds. Top with lemon and oil dressing.
- If you want, you can decorate the dish before serving with radish sprouts.
- The salad is well served with fresh toast and white wine.

Did you know? To make the dressing more aromatic, it is better to take not ready ground black pepper, but peas. If you grind it immediately before use, then the pepper will give the dish a spicy bitterness and a fresh pungent smell.
