Ingredients
- Pickled cucumbers - 7 pcs.
- Fresh champignons - 0.9 kg
- Carrots - 2-3 pcs.
- Green peas - 1 can
- Vegetable oil for frying (olive or odorless sunflower) - 4 tbsp. l
- Pepper (pepper mixture) - to taste
- Salt to taste
Step cooking
- We prepare the mushrooms: wash 0.9 kg of fresh champignons, remove the skin from the hats, and refresh the bottom of the legs, slightly cutting off the weathered places with a knife.
- Wash peeled mushrooms again, dry them and cut into plates. Champignons do not need to be soaked, as they quickly absorb water, which affects the taste of mushrooms.
- A large-diameter pan is heated on fire, pour 4 tbsp. l olive or sunflower oil for frying. When the oil warms up, pour the mushrooms sliced into slices. So that the mushrooms are fried, and not stewed in their own juice, first put half of the total in a frying pan. Add salt, ground pepper or a mixture of peppers to the mushrooms in a pan, mix and fry over high heat for 5 minutes. If you want to get a golden brown crust, hold them on the fire a little longer: 6-7 minutes. Then transfer the first batch to a plate, add oil, if necessary, and fry the second batch of champignons.
- While mushrooms are fried, we wash the raw carrots (2-3 pcs.), Peel and grate on a coarse grater. Put the grated carrots in a salad bowl.
- Add 7 pickled cucumbers to the carrots: cut off the ends of the fruits, and cut each cucumber in half along. Halves can be cut into ordinary thin half rings or slightly diagonally.
- Salt water from a can of pickled peas, and pour the peas into a bowl with cucumbers and carrots.
- Ready mushrooms are transferred from the pan to the salad bowl. Mix with the rest of the ingredients and serve. To ensure that all the taste qualities of the products are fully revealed, a salad with champignons is served warm or at room temperature.
