Ingredients
- Chicken fillet - 300 g
- Water - 700 ml
- Fresh champignons - 400 g
- Pickled Cucumbers - 300 g
- Garlic - 2-4 cloves
- Onions - 1 pc.
- Salt to taste
- Ground black pepper to taste
- Vegetable oil for frying - 2 tbsp. l
- Sour cream, mayonnaise or yogurt for dressing - 3-4 tbsp. l
Step cooking
- For starters, it’s worth preparing chicken for the salad. For the salad you will need about 300 g of meat. Fillet must first be washed and cut off excess fat, if any. Pour about 700 ml of water into the pan and put the prepared fillet. To make it cook faster, you can cut it into 2-3 parts. Salt the water and cook the fillet over medium heat until cooked. Put the finished fillet in a small plate and let it cool completely. If possible, it is better to boil the fillet in the evening and put to cool in the refrigerator. Chilled fillet is easier to cut and does not fall into pieces.
- For the salad, you also need 1 medium-sized onion. We clean it from the husk and cut into small cubes.
- A pair of garlic cloves need to be peeled and finely chopped along with the onion.
- We put the pan on the stove so that it warms up well. In a preheated pan, pour 2 tbsp. l vegetable oil. We spread the chopped onions with garlic, frying them together over medium heat until a light ruddy color appears.
- While the onions are fried, you can prepare the mushrooms. Champignons will need 400 g, while washing them in advance and letting them dry a little. Cut fresh champignons into small cubes or straws with a thickness of not more than 5 mm.
- When the onions and garlic are already lightly browned, we send the chopped mushrooms to the pan. Salt the ingredients to taste, season with black pepper and mix well. Fry over medium heat until mushrooms are cooked. All moisture must evaporate, otherwise the salad will come out too watery. Ready mushrooms set aside until completely cooled.
- Cut the boiled chicken breast into small cubes or straws. We put the chopped meat in a deep bowl, where we will mix all the ingredients.
- We cut 300 g of pickled cucumbers with straws or small cubes. If possible, choose more resilient cucumbers so that they do not secrete too much juice and keep their shape. Sliced cucumbers are sent in a bowl to the fillet.
- In the bowl, add the remaining mushrooms champignons with onions to the rest of the salad product. All products are mixed well with a tablespoon.
- At the end, we season the salad with any dressing of your choice. This recipe uses 3-4 tbsp. l sour cream or natural sour milk yogurt. You can also season the salad with homemade or purchased mayonnaise. After adding dressing, mix all the products gently.
- Salad with mushrooms and chicken is completely ready. It can be laid out in portions or in a beautiful dish, and served.The dish is prepared very quickly and simply, besides, the salad comes out hearty and juicy.
