Step cooking
- Pour 1 cup of pearl barley into a deep bowl, rinse it in cold water until the water flowing from the cereal becomes clear.
- Pour the washed barley with cold water from the tap and let stand for 2 hours. While the cereal will be infused, do the processing of vegetables.
- Peel 0.5 kg of onions. Trim the bottoms and dry ponytails, cut the onion heads into half rings about 3-4 mm thick. Transfer the chopped onions to the pan in which you will prepare the salad.
- Wash and peel 0.5 kg of carrots. Cut the carrots into medium sized slices. Pour the chopped vegetables into the cooking pot.
- Pour 350 ml of drinking water and 150 ml of vegetable oil into the pan. Any oil can be taken, most often housewives take refined sunflower oil.
- Put the tomatoes in boiling water for 30-40 seconds, remove the vegetables with a slotted spoon from boiling water, placing them in cold water.
- Peel the tomatoes from the skin, cut out the fastening of the stem. Grind the tomatoes with a blender or a meat grinder in mashed potatoes.
- Put a saucepan with onions and carrots on medium heat, cook, stirring for 8-10 minutes. Then add to the mixture washed pearl barley, thrown on a sieve. Stir, cover the pan with a lid and cook the mixture over low heat for 15 minutes.
- Add tomato puree to the pan, mix the ingredients well.
- Add julienne bell pepper (previously washed and cleaned of partitions, stalks and seeds).
- Add 3 tablespoons of granulated sugar and 1-2 tablespoons of table salt with a slide to the salad. Determine the amount of salt yourself, based on your taste and preferences. Stir the salad well, cook over low heat for 25-30 minutes under the lid. Turn the mixture over and over.
- After 15 minutes, pepper the salad with 1 teaspoon of black pepper, pour 25 ml of tablespoon of 9% vinegar.
- Wash and finely chop a small bunch of green dill, pour greens into a pan, mix the salad well.
- Put 3 bay leaves (small) in a pan, cook the workpiece for about 10-15 minutes until all components are ready. At the end of cooking, try the salad for salt, spiciness, acid. If necessary, add the necessary ingredient. You can also add your favorite herbs or spices.
- Sterilize jars and salad covers well, put the boiling salad into jars, roll them up immediately. Keep your workpieces in a cool place. Use as a standalone dish, with a side dish, as a dressing for the first or second courses.
