Ingredients
Peeled squid carcasses | 5 pieces. |
Fresh cucumber (large) | 1 PC. |
Pickled cucumbers | 3 pcs. |
Onion | 1/4 pcs |
Garlic | 1 clove |
Olive mayonnaise (can be replaced with ordinary) | 2 tbsp. l |
Tomato paste | 2 tsp |
Sesame oil | 1 tsp |
Salt | taste |
Ground black pepper | taste |
Step cooking
- We thoroughly rinse squid carcasses out under the running water. Bring the water in the pan to a boil, turn off the heat and place the above carcasses in boiling water for 3 minutes.
- After a specified period of time, we take them out and without much effort remove the film from the carcasses.
- Cut the squid into thin strips.
- We clear the fresh cucumber from the peel and seeds and cut into half rings.
- Pickled cucumbers (3 pcs.) Are also cut into half rings.
- We take 2 tbsp. l olive mayonnaise (can be replaced with ordinary) and add 1 tsp. sesame oil, 1 chopped clove of garlic, 1/4 part of chopped onion, 2 tsp. tomato paste. Mix it all thoroughly until smooth.
- Add squid, chopped cucumbers (fresh and pickled) to a deep bowl and season it all with the resulting sauce. Mix thoroughly with a spoon.
- Add salt and black pepper to the salad to taste and mix again.
- We spread the resulting salad in a serving dish, and proceed to the meal.
Decoration and serving
When serving, such a salad can be decorated with: quail eggs cooked and cut in half, red caviar, sesame seeds, green onion feathers, finely chopped greens, olives, lettuce (for example, the dish can be laid directly on them), slices of bell pepper or capers. Serve squid and cucumber salad with white bread toast. Enjoy your meal!
