Step cooking
- Boil until ready 1 kg of beans. Cooking time is from 40-50 minutes to several hours (1-2) and depends on the variety of beans.
- Wash 4 kg of juicy meaty tomatoes. Cut the stems of the stalks in the tomato. Cut vegetables into an arbitrary number of parts, 4-6-8. Place the pieces in the blender bowl, chop. Pour ground tomatoes into a deep basin with a capacity of at least 10 liters. Replace grinding in a blender by scrolling tomatoes in a meat grinder.
- Wash 2 kg of bell pepper, cut the fruit in half, remove the stalk and seed core. Cut the halves into thin strips.
- Wash and peel 2 kg of carrot root vegetables, grate the carrots on a medium or large grater, if available, use a vegetable cutter.
- Peel 2 kg of onions, cut off the bottom and tail of each onion. Cut the onion into small cubes.
- Pour 500 ml of vegetable oil of your choice into a deep cauldron of large volume; it is better to take deodorized refined oil. Heat oil well, pour finely chopped onions into a cauldron. Fry over low heat with constant stirring until the onion slices are transparent.
- Add to the cauldron a mass of tomatoes, chopped bell pepper, grated carrots, 2 kg of boiled beans (the recipe is white, but can be of any kind). Pour 300 grams of granulated sugar, 120-140 grams of salt. Mix the contents of the cauldron well with a large spoon with a long handle.
- Bring the salad to a boil, cover. Cook over medium heat, stirring occasionally for 40-60 minutes until vegetables are fully cooked. When the salad is ready, add 200 grams of tomato paste to it and pour 130-150 ml of 9% table vinegar. Stir, let simmer over low heat for 4-5 minutes, cover with a lid.
- Sterilize the half-liter jars and lids during any salad dressing in any way possible. Lay out the boiling salad in jars, roll up immediately. Put on the table, turning the banks upside down. Cover with a towel or blanket for 6-8 hours until the cans under the insulation have cooled. Store in a cool place.
The salad looks bright and appetizing, tastes good. The preparation can be used in the preparation of pizza, vegetable and meat pies, served as a salad for main dishes, used as dressing for soups, cabbage soup, borsch.
