Step cooking
- Pour the beans overnight with plain tap water. Before this, sort and wash the beans from unnecessary impurities. In the morning, drain the water from the beans, transfer it to the pan and pour clean water (1 liter). Put on fire and simmer the beans until soft. In general, this can take about 1 hour or a little less. Once ready, put the beans on a plate to cool.
- While the beans are cooling, prepare all the necessary ingredients. Peel carrots and onions, as well as garlic. Rinse them under running water. Wash greens (cilantro) and put on a towel so that it is glass and dried.
- Transfer the cooled beans into a deep bowl. Grate the carrots on a special grater and put it on the beans.
- Now is the time to introduce all the spices: first add 1 tsp. sugar, then salt and black pepper to taste, 1 tsp. ground coriander, ½ tsp powder nutmeg, 1 tsp. ground red paprika.
- Pour in 1-2 tbsp. l vinegar (depends on whether you love acidic or not).
- Mix everything very well, spices should be completely dispersed in carrots and beans.
- Place a small frying pan on the fire and heat it.
- Cut the onion in half and then chop coarsely in random order.
- Pour 40 ml of vegetable oil into the pan and put the chopped onion.
- Fry the onion until golden. Do not let the onion burn.
- While the onions are fried, in a salad, make a “hole” in the middle and squeeze the garlic into it.
- When the onion is fried, remove it from the pan and set aside - it is not needed in the salad, but pour the hot oil from the onion into the “hole” where the garlic already lies. Thus, the garlic will actually be fried, and the oil will contain the aroma of onions.
- Mix the whole salad well.
- Cut the greens of cilantro and mix in the salad.
- Send a bowl of salad to infuse in the refrigerator for two hours. Just do not forget to cover with something, otherwise all products in the refrigerator will be saturated with its aroma. After two hours, beans and carrots in Korean can be served on the table. Enjoy your meal!
