Step cooking
- First you need to boil lentils. Pour into a pan of water in a ratio of 1 part lentils and 3 parts water. Add some salt. Then pour the pre-washed lentils and cook until tender for 20-25 minutes, until it becomes soft. After this, drain the water and leave to cool slightly.
- While the lentils are cooking, prepare the basis for the salad. For this we need carrots, onions, red bell pepper, spinach and celery stalk. We peel the onion from the husk, bell pepper from the cuttings, seeds and internal partitions, and remove the skin from the carrots. The celery stalk is thoroughly washed and also peeled off from it, if necessary. Remember that young juicy stems do not need to be cleaned. All vegetables are cut into small cubes. If the onion is small, it can be cut into rings or half rings. We also need 1 clove of garlic. We also peel it and finely chop it.
- We put a pan on the stove, pour a little olive oil into it and warm it well.
- First we send onions, celery, garlic to the pan, and fry, stir occasionally.
- After 1-2 minutes, send the chopped carrots to the pan and mix.
- Next, add red bell pepper to the rest of the ingredients in the pan. Do not forget to stir so that nothing burns.
- Cut 3-4 champignons into thin slices and spread them in a pan. Salt and pepper to taste. Add some Provence herbs or any other collection.
- When the vegetables become slightly golden, spread the lentils to them and mix thoroughly.
- Next, add a little spinach greens.
- Then add 1 tbsp. l balsamic vinegar and mix again.
- We take another pan, add a drop of olive oil to it, heat it, put a confectionery ring on it. Break 1 chicken egg into this ring and fry until the protein has hardened. It is advisable to leave the yolk liquid. But here it all depends on your personal preferences. The number of fried eggs must be calculated from the number of needed servings.
- We spread the salad on a portioned plate, lay the egg on top and carefully remove the ring. Enjoy your meal.
