- How to choose shrimp - when buying these crustaceans, pay attention to the fact that the tail of the shrimp should be bent inward, to the abdomen. This is the main sign that before freezing the product did not lie for a long time after catching.
- Arugula - choose only fresh, springy leaves. The grass is not stored for a long time, so take the amount needed to prepare the dish. Arugula should not be frozen, it completely loses its unique nutty mustard taste when frozen. Spicy grass is not cut, but torn by hands.
- Avocado selection - to choose a ripe fruit, pay attention to the softness of the fruit and the color of its skin. Take avocado slightly soft. The peel should be dark green, close to brown (we are not talking about black varieties of avocado). The skin color of the handle is light yellow, if the perimeter of the handle is darker, the fruit is overripe and does not fit as an ingredient for salad.

- If there are boiled and subsequently frozen shrimps (they are pink) - put the product (300 g) in a colander and rinse under cold running water. Put boiling water (1 liter), add salt (1 tsp. With top). Dip the shrimp in water. Cook after boiling water for 3-5 minutes (depending on size). Throw the shrimp in a colander. Cool, clear of shell and entrails.
- If you bought a frozen product (it is gray), wash the crustaceans under running water. Boil shrimp (300 g) in salted (1 tsp. With a slide) water (1 l) 5-10 minutes after boiling. Ready shrimp pop up. Cool, clean.
Preparation of vegetables and herbs
- Wash and cut the cherry tomatoes in half (200-250 g).
- Wash the avocado (1 pc.), Cut in half. Cut into small cubes about 1 cm by 1 cm.
- Pre-washed arugula (100 g), tear with your hands into large pieces.
Cooking dressing
- Wash the lemon. Cut the citrus in half, use one half. Squeeze the juice of one half into a small salad bowl.
- Add a pinch of salt to the juice, stir. Pour olive oil (2 tbsp.) Into lemon juice.
