Step cooking
- First, prepare the liver. A couple of hours before creating the salad, pour 400 g of pork liver with water so that it is well washed and all bitterness comes out of it. It is better to cut it in portions at once. We send a pot of water to the fire, let it boil. We put the liver in boiling water and boil until ready for 15-20 minutes. If you cook a whole liver, then it will take a little more time for cooking, about 35 minutes. The boiled liver is transferred to a clean bowl and allowed to cool. After cooling, we rub it on a grater.
- Simultaneously boil three chicken eggs. By the way, it is better to use eggs for cooking not of the first freshness, so you can quickly and easily peel them. We send a stewpan with water to the fire and immediately put eggs in it. After they boil, make a fire below average and cook for 6-8 minutes. If you still have very fresh eggs, add salt to the water, then it will be easier for you to clean them. After a while, we drain the hot water from the eggs and fill it with cold. If necessary, drain the water twice so that the eggs cool faster. Then we put the egg on the table, cover it with the palm of your hand and gently press it. We roll the eggs on the table, the shell is thus deformed, and it will be easier to remove. Such manipulations are repeated with all eggs. Grate two eggs, and leave one to decorate the salad.
- We clean one onion, cut into very small cubes and send to the bowl. Fill it with 4 tbsp. l vinegar 6%. If you have 9% vinegar, dilute it with water. Take 3 parts vinegar and one part water, mix and pour onions. Leave to marinate for 10-15 minutes. Then squeeze and leave on demand.
- On a coarse grater we rub 100 g of hard cheese.
- Grate pickled cucumber and squeeze it, remove excess fluid.
- We put the culinary ring on a large flat plate. If you do not have such a ring, simply lay out the salad in layers in the form of a slide, this is not important.
- We pour half of the grated liver, distribute in an even layer and lubricate with a small amount of mayonnaise. We can add salt to the liver above.
- We spread the pickled onions with the next layer, also distribute it evenly. Cover the onion layer with a layer of mayonnaise.
- Now spread the layer of grated eggs and grease with mayonnaise too.
- Then spread the pickle and grease with mayonnaise.
- We spread the grated cheese with the next layer, grease with mayonnaise.
- Then pour the remaining liver, distribute evenly, sprinkle with salt and grease with mayonnaise.
- Divide the remaining egg into yolk and protein and rub them separately. Sprinkle the lettuce along the edges of the yolk, cover with protein in the middle. Finely chop the fresh parsley and sprinkle the salad. If there is time, send to the refrigerator for 1 hour to insist. Then we remove the culinary ring and can serve it to the table.
