Step cooking
Cook eggs
- We put 3 chicken and 2 quail eggs in a liter pan, pour 0.5 liters of water, put on a large fire and wait for the liquid to boil.
- When the water boils, reduce the heat and leave to boil for 5 minutes. After time, we take out the quail eggs, place them in a deep container and pour 1 liter of cold water.
- 5 minutes after the quail eggs are pulled out, we take the chicken eggs out of boiling water, place them with the quail eggs in cold water and leave to cool.
Cooking salad
- We cut 4 slices of 3-4 mm thick from 300 g of cheese and cut out decorations for the future salad from them with special molds, put them on a saucer, cover with cling film and leave aside.
- The cheese remaining after cutting the ornaments is rubbed on a coarse grater into a deep container.
- On a coarse grater, rub the eggs into a deep bowl. To the grated ingredients, add 4 garlic cloves passed through a press.
- Grate 600 g of boiled beets on a coarse grater and add it to a deep bowl.
- Sprinkle crushed products 1 tsp. salt, 1/3 tsp ground black pepper and add 150 g of mayonnaise, after which with a tablespoon we mix everything thoroughly until smooth.
- Cut the quail eggs into quarters.
- We put a ring from the mold with a diameter of 18 cm on the dish, put the mixed ingredients in it and carefully ram them with a spoon, trying to make the surface even.
- We spread a piece of cling film on a cutting board, and put 60 g of fried walnut kernels in one layer in one layer, cover them with the second half of the film and gently chop with a meat hammer. Sprinkle chopped walnuts on top of the salad, level with a spoon and gently squeeze.
- Carefully remove the ring, taking care not to disturb the shape of the salad. On the sides of the salad symmetrically attach cheese decorations. We spread quarters of quail eggs in the middle and put greens from 2 sprigs of parsley in the core, and serve.
Important!So that the salad does not turn out to be excessively watery, it is necessary to slightly squeeze the beets after grinding on a grater with your hands so that the juice comes out a little.
