Ingredients
- boiled pearl barley - 200 g
- olives - 200 g
- tomatoes - 200 g
- green onions - 1 stalk
- parsley - 1 bunch
- lemon juice - 2 tbsp. l
- mustard - 0.5 tsp.
- olive oil - 50 ml
Step cooking
- We cut olives weighing 200 g in half.
- We cut 200 g of tomatoes into medium-sized cubes.
- Finely chop 1 stalk of green onions and a bunch of parsley.
- In a deep salad bowl, mix 200 g of boiled pearl barley and prepared ingredients.
- In a separate container, pour 50 ml of olive oil, 2 tbsp. l lemon juice and add to them 0.5 tsp. mustard.
- Season salad with ready-made sauce and mix the ingredients well.
Despite the fact that barley salad is dietary, the presence of healthy cereals makes it very satisfying. You can safely replace a full dinner with such a salad.

In order to make the finished salad even tastier and more original, we suggest you pay attention to the following recommendations:
- Before boiling the cereals, it is best to soak in cold water for 3 hours.
- In order for the finished barley to be more fragrant and tasty, it can be boiled in vegetable broth.
- It is better to use parsley not curly, but flat (Italian): it has much more taste and aroma.
- Instead of olives or in addition to olives, capers or olives can be used.
