Ingredients
- Cottage cheese - 300 g
- Sour cream 15% - 3 tbsp. l
- Sugar - 150 g
- Chicken eggs - 3 pcs.
- Sunflower oil - 90 ml
- Vanilla Sugar - 10 g
- Baking powder - 10 g
- Coconut flakes - 1 tbsp. l
- Flour - 265 g
- Salt - 0.5 tsp.
- Frozen berry berries - 1 stack.
- Corn starch - 1 tsp.
Step cooking
- We break 3 chicken eggs into a deep container and beat them with a mixer at high speed until smooth.
- Add 150 g of sugar to the eggs, 0.5 tsp. salt and whisk again with a mixer at high speed until a lush white mass is obtained.
- Add 10 g of vanilla sugar and 80 ml of sunflower oil, then beat again with a mixer until smooth.
- Rub through a sieve into a deep plate 300 g of cottage cheese, then add it to the egg mixture along with 3 tbsp. l sour cream 15% and mix thoroughly with a spoon until the dough becomes homogeneous.
- Pour 10 g of baking powder into the dough, add 1 tbsp. l coconut flakes and 150 g flour, then mix well, add the remaining 100 g flour and mix again so that there are no lumps.
- We turn on the oven, set the temperature to 180 ° C and leave it to warm up.
- In a deep plate, pour 1 glass of frozen berries of the berry, sprinkle them on top of 1 tsp. with a hill of corn starch and mix thoroughly so that all the fruits are covered with starch.
- Lubricate a round cupcake mold with 10 ml of sunflower oil and sprinkle 15 g of flour, then spread the frozen berries on the bottom with an even layer, spread a thick dough on top, hit the table several times with the form so that the dough evenly fits in the form, and send it to the preheated oven for 50 -60 minutes.
- After 50-60 minutes, when the surface of the cake is browned, check its readiness with a wooden toothpick, then remove it from the oven and leave it to stand in shape for another 5 minutes.
- After 5 minutes, gently draw a knife along the walls of the mold, then turn the mold over, carefully shake the pastries out of it onto the dish and leave to cool.
- When the cake has completely cooled, cut it into portioned slices, put it on a dessert plate and serve.
