Natural honey or sugar | 1-2 tsp |

Step cooking
- To prepare rye cakes, you need 200 ml of kefir. It is important that the fermented milk product is warm, and not from the refrigerator. To warm it up a bit, you can use the microwave. Pour the warmed kefir into a deep bowl and add 1 tbsp. l vegetable oil and half a teaspoon of salt. Also, in yogurt you need to add 1-2 tsp. natural honey, but if you don’t have such a product at home, then it is replaced with sugar. All ingredients are thoroughly stirred with a whisk.
- In a separate bowl, mix 250 g of rye flour with 1 tsp. soda.
- Flour with soda is gradually added to kefir, regularly stirring with a fork or whisk.
- After the dough becomes more uniform consistency, shift it to a flat surface. Pre-sprinkle the table with the remaining flour so that the dough does not stick. Knead the dough with your hands for 5-7 minutes. The finished dough turns out to be quite soft and resilient, while not sticking to the hands and table.
- Wrap the dough in a plastic bag or plastic wrap and leave it to lie down for 30 minutes at room temperature. This is required in order for the gluten to swell.
- With a small amount of rye flour, about 15-20 g, grease the dough and form a thick, oblong sausage from it. Divide into 6 equal parts. This can be done with a kitchen knife or a special scraper designed to separate the dough.
- Each piece of dough is slightly dipped in flour and knead with your hands until a cake is formed about 1 cm thick. It is not necessary to make a round cake, you can make it of any shape. Repeat similarly with the remaining 7 cakes.
- On a baking sheet covered with parchment paper, lay out the formed cakes. Before baking, you need to pierce them with a fork on top in several places.
- Preheat the oven to 220 degrees and set the pan with rye cakes for 15-20 minutes. We take the finished cakes out of the oven and transfer to a beautiful dish. You can serve them in the first dishes instead of bread. You can also eat cakes of rye flour with tea, greasing them with honey or jam.
