Fish preparation
- Wash the fish, clean from scales. Remove all fins, gills, eyes. Clear from the insides. Rinse the fish well.
- Along the fish we make with the knife transverse incisions, quite frequent, to the spine so that the fish is saturated and the bones are less noticeable. We are doing exactly the same with two other fish.
We make the same cuts on the other hand. Incisions can be made evenly and at an angle. Approximately 10-12 incisions are made on each side.
Dry mix preparation
- Pour into a cup 1 tsp. salt. Add 0.5 tsp. seasonings for fish. Put 0.5 tsp. ground coriander. Add 0.5 tsp. ground paprika. We grind at the mill and add 2 g of freshly ground black pepper. Mix all seasonings.
- With this dry mixture we rub the fish on the outside and inside. Let the fish stand for 15 minutes to soak it.
Stuffing for fish
- Cut 3 onions in half rings or cubes.
- Finely chop 1 mixed bunch of parsley and dill.
- We shift the chopped onions and herbs into a bowl, mix.
The filling is light, aromatic and tasty.
Filling Options
- You can put anything you like into the filling: finely chopped tomatoes, bell peppers, olives, pomegranate seeds, lemon slices, etc. It all depends on your taste.
- You can cook fish with carrots and onions, potatoes and mushrooms.
- Bake fish under cheese.
- Experiment with different spices and sauces.
Cooking fish
- We will start the fish already on the baking sheet, which is previously covered with foil. We do not regret the filling, put a lot. From this fish will turn out only tastier and juicier. You can even put it in the holes where the gills were. After the fish has been stuffed, squeeze ½ lemon juice on it. He will remove the specific smell of lemon and give the meat piquancy.
- Turn on the oven 180 degrees, let it warm up. We take 180 g of sour cream, add a pinch of salt, a pinch of freshly ground black pepper (optional). All mix well. Grease the fish with sour cream. This will give her a creamy taste, juiciness and tenderness. Greasing the bream with sour cream, we also get a golden and fried crust.
- We send fish to the oven for 30-35 minutes. We take out the fish from the oven. Let it cool down a bit.
- Then we shift to a dish for serving, decorate at our discretion. You can put several branches of dill and several slices of lemon near the fish. We serve to the table.
