- Cut the fillet into slices 3-4 cm wide. The size of the slices can be made arbitrary, depending on your desire and the type of fish. Salt and pepper pieces of fish to taste.
- In a deep bowl, beat the chicken eggs (3 pieces).
- Add salt (to taste) and ground black pepper (to taste) to the eggs. Beat the mixture with a fork or whisk until smooth. Add flour to the egg mixture in small portions (4-6 tablespoons). The batter should be of medium density, too thin a composition will roll off the fish, and too thick will give a very thick crust, which is tasteless and economically disadvantageous (too much batter is consumed).
- Heat the pan well, pour vegetable oil (100-150 ml). Wait until the oil has warmed up well. You can check the readiness of the oil for frying in this way - drip a drop of batter into the pan. If bubbles form around the droplet and the drop quickly floats to the surface of the oil, then you can start cooking the fish.
- Dip each piece of fish into the batter from all sides using a fork.
- Spread in a frying pan, fry until golden brown on each side for about 10 minutes. Do not overexpose the fish, otherwise the crust will become dry and the fish will not be juicy.
