Fish preparation
- Peel fish (800 g), remove entrails and gills. Rinse well under running water.
- On each side of the carcass, make vertical cuts of a thick layer of meat half the width of the fish. Cut from the dorsal fin to the ribs, the width between the cuts is approximately 2.5-3 cm.
- Pour the fish with lemon juice (2 tbsp. L.) On top and inside the abdomen.
- Salt the fish on both sides (to taste).
- Sprinkle black pepper over the carcass to your liking.
- Rub the inside of the abdomen with salt and pepper (to taste).
Cooking toppings
- Wash and peel a small carrot (1 pc.). Rub on a coarse grater. Put in a bowl.
- Peel the onion (2 pcs.). Cut one onion, cut into thin quarters, the thickness of the straw is about 2 mm. Add onion straws to a bowl of carrots.
- Cut the second onion into rings about 3-4 mm thick, lay separately from other vegetables.
- Rinse parsley (small bunch), cut into small pieces. Pour the chopped greens into a bowl of chopped carrots and onion slices.
- In the sour cream (6 tbsp. L.) Put salt (0.5 tsp.) And pepper (pinch), add the clove of garlic chopped with garlic presses (1 pc.). Stir the mixture until smooth.
- Add 3 tablespoons of sour cream in a bowl with vegetables, mix well.
Assembly and cooking
- Spread a piece of foil (such that the fish can be wrapped) on a table. Lubricate with a vegetable oil (15-20 ml) area a little larger than fish.
- Put onion rings on greased foil.
- Stuff the fish with filling (vegetables with sour cream), putting it in the abdomen of the fish. You do not need to ram the filling. Put stuffed carp on a pillow of onion rings.
- Lubricate with sour cream (3 tbsp. L.) The entire surface of the fish.
- Cover the carcass of the carp with a second piece of foil, squeeze the foil with your hands the size of a fish.
- Tuck the edges of the bottom foil. Transfer carp in foil to a baking sheet.
- Place the fish in an oven heated to 190 ° C. Fry for 40 minutes. Remove the dish from the oven, remove the top foil to make the fish brown. You can simply cut the top of the foil and push the edges apart. Return the fish to the oven for another 15-20 minutes.
Oven baked carp in sour cream, served hot or cold as a main course, with various side dishes. You can serve fish on a dish decorated with lettuce, mugs of tomatoes, bell pepper, sprigs of fresh herbs. As a side dish served baked or boiled potatoes and vegetables, mashed potatoes, rice, pasta.
