Step cooking
- Put the stewpan with water on the fire. At this time, rinse pieces of chicken liver (1 kg) under cold running water and, when the liquid in the pan boils, throw it there. Cook for 15 minutes.
- Grate one large carrot on a coarse grater, and chop the two medium onions arbitrarily.
- Heat the pan well, pour about 30 ml of refined vegetable oil into it and put chopped onions and grated carrots. Fry lightly until vegetables are tender.
- When the liver is cooked, and the vegetables are passaged, put them in bowls and wait for cooling. While the products are cooling, get 200 grams of butter, it should be soft, that is, at room temperature. Salt it lightly, add a finely chopped bunch of fresh dill and mix everything thoroughly until smooth.
- The cooled liver and carrots with onions must be scrolled twice through a meat grinder. This is important in order to achieve a more pasty consistency.
- In the resulting mass add salt and pepper to taste, 50 grams of soft butter, squeeze a couple of cloves of garlic and mix well.
- Fold the food wrap in two layers so that a rectangle of about 60 cm by 40 cm is obtained. Distribute the entire mass over the film up to the edges, the thickness of the layer should be about 3-4 mm.
- Lubricate the surface with the previously prepared oil mixture, departing from the edge of 1 cm.
- Gently form a roll, removing cracks in the process of twisting. Then tightly wrap it in cling film, put it with the seam down in the refrigerator for at least 5 hours.
After a specified period of time, you can get a dish, remove the film and serve. The roll is completely frozen, it does not break up and has a delicate structure. The dish perfectly combines the taste of soft liver paste and butter. In the context, it turned out to be very beautiful, with a clear distribution of layers.
You can pre-cut it portionwise, or you can put it on the table in general condition - everything is at your discretion. Another more everyday option: use a thinly sliced piece of roll on a slice of white bread and enjoy a sandwich.
