Ingredients
- Chicken fillet - 400 g
- Onions - 200 g
- Wheat flour - 2 tbsp. l
- Butter - 50 g
- Chicken Egg - 1 pc.
- Vegetable oil - 3-4 tbsp. l
- Salt - ½ tsp.
- Black pepper (ground) - ¼ tsp.

Step cooking
- Rinse the chicken fillet (400 g), dry it (with paper towels) and leave for 30-40 minutes. in the freezer so that it hardens slightly - so it’s easier to cut for cutlets.
- Leave the butter (50 g) briefly at room temperature.
- Lightly frozen filet cut into small cubes with a sharp knife.
- In a bowl, release 1 egg and transfer the chopped meat there.
- Add ½ tsp. salt, ¼ tsp black pepper and a pinch of spices to your taste.
- Add butter to the meat.
- Peel and rinse 2-3 medium onions (200 g). Grind the onions in a blender until smooth and transfer to the meat.
- Stir everything until smooth with your hands or a spoon. So that the butter is evenly distributed in the cutlet mass, it can be grated chilled on a coarse grater.
- Sift flour into the cutlet mass (2 tbsp. L.), Mix everything well again.
- Pour vegetable oil (2-3 tbsp.) Into a pan, heat over medium heat and lay out the first batch of cutlets with a tablespoon.
- Fry the meatballs over medium heat for 4 minutes. on each side, gently turning over with a spatula.
- Put the finished patties on a plate. Such cutlets are tasty both hot and cold. They can be served with your favorite side dish, or you can put them in the form of a filling in a hamburger. Enjoy your meal!
Useful Tips
- Put the finished meatballs on paper towels - they will absorb excess oil.
- You can cook a more dietary version of such cutlets: pour a little oil on the pan and cook the cutlets under the lid for 5-7 minutes on each side on the smallest fire. So, of course, you will not get a crispy crust, but slightly reduce the burden on the digestive tract.
- Chicken fillet is usually a little dry, so you can add sour cream, mayonnaise, grated cheese to the meat for softness and juiciness, and chop a piece of zucchini or potato with onions in a blender - all these additives will make the patties softer and more tender.
- Instead of flour, the same amount can be added to the cutlet mass. Only then must the mince be allowed to stand for at least 30 minutes so that the semolina swells and softens.
