Ingredients
- Chicken breast (chicken fillet) - 400-500 g

- Kefir / natural yogurt / sour cream - 3-4 tbsp. l
- Starch (any) - 1 tbsp. l
- Vegetable oil (olive) - 3-4 tbsp. l
- Salt - ½ tsp
- Ground black pepper - to taste
Step cooking
Cooking minced meat
- Chop the small onion into small cubes.
- Pour the chopped onion with a cup of boiling water, and leave for 5-7 minutes so that bitterness comes out, and the onion becomes tender.
- Dissolve in small cubes 400-500 g of chicken (two small chicken breasts without skin).
Important! To simplify the cutting of chicken fillet crawling under the knife and hands, it can be placed in the freezer for 20-30 minutes. Frozen poultry meat is cut very easily and evenly.
- Pour ½ tsp into chopped chicken cubes. salt and pepper to taste.
- Add 3-4 tbsp. To the diced fillet. l natural yogurt. It can be replaced with good thick kefir or low-fat sour cream.
- Drive a chicken egg there and mix thoroughly.
- To the contents of the bowl / cup add 1 tbsp. l without a slide of corn (or potato) starch, and mix thoroughly again.
- Throw the steamed onions onto a strainer and add it to the minced meat. Stir the minced meat until smooth and send the bowl in the refrigerator for 20-30 minutes.
Fry cutlets
- It is good to heat the pan over medium heat, and pour in 1 tbsp. l vegetable oil.
- Put the prepared mincemeat on the bottom of the pan with a spoon on the principle of baking fritters.
- Fry, without covering, over medium heat for 2-3 minutes on each side until a beautiful golden crust forms.
Serving and decoration
Ready chopped cutlets are served both hot and cold with any side dish. As a side dish, you can offer fresh vegetables or salads from cucumbers and tomatoes. Garnish with chopped herbs or whole sprigs of parsley, dill, arugula, cilantro. Several basil leaves placed on hot cutlets can give a pleasant aroma. Serve the chopped cutlets with a sauce - tomato, sour cream or soya sauce, especially if a side dish is offered with rice.
