Step cooking
Cooking Chopped Puff Pastry
- Pour 90 g of cold water into a jar or carafe. Add to it 10 ml of apple cider vinegar. We put water with vinegar and chopped oil in the freezer for 15 minutes.
- Cut into small pieces 200 g of butter.
- Sift 300 g of flour, put it in the refrigerator for 1 hour. Mix flour with 0.5 tsp. salt.
- Pour the flour onto the work surface, slightly level, removing the top.
- Put chilled butter in the middle of the flour.
- With a large knife, chop the butter and flour into small crumbs the size of a grain of rice.
- Gradually pour chilled water with vinegar. Mix with a knife.
- We collect the dough in a lump, put it in a plastic bag, and give it a rectangular shape. Put the dough in the refrigerator for 2 hours.
- Put the chilled dough on baking paper.
- Cover with a 2nd baking sheet.
- Roll out with a rolling pin to a thickness of 0.5 cm.
- After rolling, we fold the dough threefold and again roll it to a thickness of 0.5 cm.
- Fold the dough three times again, cut it in half.
- We shift each piece into a bag and leave it in the refrigerator for 30 minutes. After that, you can cook pastry from the dough.
Apple preparation
- We take 2 large red apples, remove the core with the appliance. Cut in half.
- Then we cut each part into thin plates (from the tail to the calyx).
- Put in a deep bowl and water 1 tbsp. l lemon juice.
- Pour boiling water so that the water covers the apples.
- Cover and leave for 15 minutes.
- We put the apples in a colander so that the glass is all liquid.
Cooking roses
- Mix 60 - 70 g of sugar with 2 - 3 g of cinnamon. In a stewpan on a fire, melt 50 g of butter.
- Sprinkle the working surface with flour.
- We spread half a portion of chopped dough, roll it into a rectangle 3 mm thick.
- Cut into 6 identical strips.
- Grease each strip with melted butter.
- We lay the apples on a strip so that the lower part of the strip is free, and the plate of apples overlays one on top of the other.
- Lubricate apples and sprinkle sugar and cinnamon on top.
- We put the free part of the strip on the apples.
- Twist in the form of a roll.
- Cut baking paper into squares so that roses fit on them. Lubricate the square with butter, put a rose on it.
- We put roses in the cells of the mold for muffins.
- From above, all the roses are greased with oil.
- Sprinkle with sugar and cinnamon.
- In an oven preheated to 210 degrees, put the form on an average level. Bake for 45 - 50 minutes.
- 15 minutes after the start of baking, we cover the roses with foil so that the top does not burn.
- After baking, take it out of the oven and cool for 15 minutes.Ready roses are transferred to the dish.
