Step cooking
- The first step is to prepare the rice for the rolls. For this we take exclusively round rice, in no case not long, which is not suitable for rolls at all. We wash 250 grams of rice 7-8 times with cold water until it becomes clear.
- We place the washed rice in a pan with a thick bottom, pour 370 ml of cold water there. We put the pan of rice on the stove, cover it loosely, wait for the water to boil. It is important not to miss boiling.
- When the water boils, close the lid tightly, reduce the heat to a minimum, cook for 12-13 minutes, until the water is absorbed into rice. We don’t open the lid, do not interfere or touch anything, the main thing is not to miss the set time.
- While the rice is boiling, do the dressing. Pour 30 ml of rice vinegar into a small stewpan and set it on minimum heat, since you just need to heat it to intensively dissolve the other components. Add half a teaspoon of sugar and salt to the stewpan, and then a small piece of nori about 25 square centimeters in size.
- We take a wooden kitchen spatula, mix the ingredients until the sugar and salt dissolve, and the nori gives a flavor. When sugar and salt dissolve at this minimum heating (you cannot boil), pour the vinegar into a separate container, and remove the piece of nori away.
- Now prepare a fresh cucumber for rolls. We cut a long fresh cucumber in half, and each half again in half lengthwise. We need to remove the soft part consisting of seeds in the cucumber. We do this with a very sharp knife.
- When we remove the flesh, we cut each of the four parts into thin strips, we remove so far to the side.
- Meanwhile, 12 minutes have passed, remove the rice from the stove, leave it separately with the lid closed for another 10 minutes.
- Prepare the baking sauce. On a cutting board, we cut 6-7 pre-peeled shrimps, place them in a separate bowl.
- Add three teaspoons of Philadelphia cream cheese, two teaspoons of capelin caviar, one tablespoon of hot sauce. Mix the ingredients thoroughly. The baking sauce is ready, remove it so far to the side.
- 10 minutes have passed since they set the rice to reach readiness without fire. We spread it in a deep container, mix it with a wooden spatula or a spoon (not a metal one), carefully add rice vinegar with sugar and salt, mix and set aside to cool.
- We proceed to the formation of rolls. We wrap a piece of mat with cling film. We put on it a sheet of nori, which is most often the size of 20 by 20 centimeters. To make the rolls more accurate, we cut off two marked strips from the sheet, remove them, and on the rest of the layer we will form a product from rice and shrimp.
- We put on rubber gloves, take some mass of rice, put it on the nori, not reaching 2-3 cm from one side of the formation in order to carefully close the roll later.
- On top of the rice, in the center of the nori, lay a strip of Philadelphia cheese with a teaspoon or syringe.
- Then, along the perimeter of the strip of cheese, lay out thin slices of cucumbers on one side of the cheese, and on the other, pre-cleaned shrimps parallel to the cheese and cucumbers.
- Now we turn the roll: we wrap together with the nori mat in the direction on which the rice was not completely laid, we press, but not very tightly, so that the edges join.
- It may turn out that on the sides of the rice will start to come out. Then gently press the knife on the sides, returning it inside the roll.
- We remove the mat, we get a roll in the form of a long sausage.
- We cut it with a very sharp knife with one click, first into two parts, then each into two more, we get eight products of the same size that we put on a baking sheet and put in the oven for 8-10 minutes at a temperature of 200-220 degrees. Before sending it into the oven, place a thick thick sauce of cheese, shrimp and hot sauce on each roll. Put one shrimp on top.
- After 8-10 minutes, we take the rolls out of the oven, pour soy sauce, and can serve.
