Step cooking
- We will prepare all the ingredients on the list. To start, make a couple. To do this, pour 200 ml of warm milk into a deep bowl. Knead 50 g of fresh yeast with your hands and add them to milk, then pour 75 g of sugar, with a fork or whisk, stir until smooth. Leave the dough for 15 minutes so that the yeast begins to act.
- Melt creamy margarine in a casserole on a plate. Then cool a little, it should be at room temperature, not hot. Pour margarine into the yeast, mix. Then we drive in 2 eggs, pour 0.5 tsp. salt and mix thoroughly so that all the ingredients are combined.
- Sift 800 g of wheat flour to enrich it with oxygen. Add it to the liquid ingredients in parts, mixing well each time. When the dough is thickened, put it on the work surface and continue to knead with your hands. The dough is soft and elastic, it is very pleasant to work with it.
- Wrap the well-kneaded dough in cling film and put in the refrigerator for 2 hours, so that the dough rests and increases in volume.
- Sprinkle the working surface with flour, and once again knead the rest of the dough. Then, with a sharp knife, divide the dough into three parts. Take one part of the dough and roll it into a 0.5 cm thick circle. Divide the circle into 6 parts. The smaller the circle you roll out, the smaller the bagels will be, and vice versa.
- It is better to use a very thick jam for the filling, so that when baking it does not leak out and does not burn. If you have strawberry, cherry or other jam with berries, then only berries without liquid should be used. From below, where the dough is wider, make an incision 2 cm long. Spread 1 tsp. jam on the widest part and spin the bagel.
- Also, for filling, you can use any dried fruits - raisins, dried apricots, figs. In this case, you do not need to make an incision on the test, just lay out the dried fruits and twist the bagel.
- Thus, we form bagels from the whole dough. Put the bagels on a baking sheet covered with parchment paper or greased with oil, and leave them to stand for 15 minutes.
- Then grease each bagel with an egg, and send it to a preheated oven to 180 degrees for 20 - 25 minutes. If you have smaller bagels, then the baking time should be reduced.
- Cool the browned ready bagels, put them on a plate and call everyone to the table.
