Step cooking
- To make bagels, you need 70 g of butter. It is recommended to cut into small cubes before cooking and put in the refrigerator to solidify. Sift 150-160 g of wheat flour through a sieve into a deep bowl and add a pinch of salt.
- To bulk ingredients add 50 g of sugar and 1/2 tsp. soda. The latter can be replaced with a baking powder, which requires 1 tsp. We also add a pinch of vanillin to the bowl and thoroughly mix bulk products with a tablespoon. Pieces of chilled butter are put in a bowl with flour and other ingredients. Hands rub it all into crumbs. If it is inconvenient to grind the oil in this way, then you can freeze it a little and rub on a coarse grater. Rubbing oil is required quickly so that it does not begin to melt.
- In the resulting oil crumbs, make a small depression in the middle and put 100 g of sour cream and 1 chicken egg in it. Mix everything first with a spoon, then with your hands.
- In the resulting mass, gradually sow 80-100 g of wheat flour. The amount of flour can be more or less, since it all depends on the proportions of other ingredients, for example, egg size or sour cream fat. It is important that the finished dough is soft and slightly sticky. On average, the process of kneading dough for bagels takes 5-6 minutes. We divide the dough into 2 equal parts, each of which we wrap in a plastic bag or cling film. Put the blanks in the refrigerator for 30-40 minutes.
- As a filling, you can use any sweet ingredients. In this recipe, bagels are prepared with 4 different fillings. Some bagels will be with 50 g of walnuts, 10 g of sugar and cardamom to taste. We prepare others with the addition of 70-80 g of raisins and 1/2 tsp. vanilla sugar. And in the rest we add apricot and apple jam. You can cook with similar fillings, or choose one of your choice.
- On a table lightly sprinkled with flour, put the chilled dough and roll it with a rolling pin into the formation. The thickness of the rolled dough is approximately 2-3 mm, and the diameter is 30 cm.
- We divide the rolled dough into 16 triangular parts. We spread about 1/2 tsp for each piece of dough. toppings.
- Twist each bagel. If jam is chosen as the filling, then it is recommended to press down one edge of the dough a little so that it does not leak. At the end of the edge of the bagel can also be pressed slightly. Similarly, we roll 2 pieces of dough, cut into pieces and form bagels with any filling. We cover the baking sheet with parchment paper and put the bagels on it, placing them with the wrapped edge down.
- Preheat the oven to 180 degrees. Shake 1 egg yolk in a small plate and grease each bagel before baking. Put the pan in the preheated oven for 10-15 minutes.After a quarter of an hour, bagels will increase in volume and acquire a beautiful ruddy hue. We take them out of the oven and transfer them to a beautiful dish. You can sprinkle powdered sugar on top of the bagels.
