Step cooking
- In 0.3 l of warm milk, dissolve 0.5 tsp. salt. Pour salted milk into 70 g of fresh yeast, stirring, we achieve dissolution.
- We rub on a coarse grater 200 g of margarine (you can also take butter). Whisk 2 eggs in a separate bowl with a whisk. Pour the eggs into the milk with the yeast diluted. We spread the grated margarine there. Pour in 50 ml of vegetable oil. Pour a bag of vanillin - 2 g.
- We begin to knead the dough, gradually adding flour, which should first be sifted. Just need 0.7-0.8 kg of flour. Kneading the dough, send it to the refrigerator, where it should lie for 45 minutes to an hour.
- We divide the finished dough into 3 parts, we work with one, the rest are waiting in the refrigerator for their time.
- Bagels should be stuffed with thick jam or marmalade, all it needs is 200 grams. If the jam is liquid, put it on a sieve so that the syrup is stacked.
- Roll out the dough with a rolling pin, creating a circle with a diameter of about 25-30 cm. At the same time, sprinkle the entire surface of the test several times on both sides with sugar, which only takes about a glass. The thickness of the rolled cake should be 2-3 mm. You do not need to add flour, otherwise sugar grains will stick poorly to the surface of the dough.
- Cut the circle into segments, cutting them from the center to the edges. The number of servings depends on what size you want to get bagels - larger or smaller in length.
- We spread jam on a wide part of each segment - quite a bit. We twist the bagel, pinching it on the sides - from the wide side to the narrow. Each bagel - on one side only - is dipped in sugar.
- We spread the resulting products on a baking sheet (sugar side up), which we cover with parchment (or you can just grease it with vegetable oil).
- We heat the oven to 180ºС, set a baking sheet there and wait 15 minutes. Then we reduce the temperature to 170 ° C and bake for another 20-25 minutes until the bagels become golden brown. The time indicated is indicative, since the larger the product, the more it will be needed for complete baking.
