Step cooking
- Kefir (250-280 ml) is slightly warmed to a warm state and pour into a deep bowl. Pour dry yeast (1 teaspoon) and sugar (80 grams) into kefir. Mix well with a whisk.
- Beat in a bowl of chicken egg (1 piece) and pour the melted butter (50 grams). Mix everything thoroughly with a whisk.
- In the sifted flour (500 grams) add salt (1/2 teaspoon) and mix gently.
- Add the flour parts in a bowl with a mixture of liquid ingredients and mix first with a whisk, then with a spoon.
- When the dough thickens, sprinkle the surface of the table with flour, and laying it on the surface, knead with your hands.
- The dough should form into a ball and stop sticking to your hands, while it should be soft and elastic.
- Grease a bowl with vegetable oil and put a bowl of dough into it, gently squeezing it with your hands. Tighten the bowl with cling film and place in a warm place so that the dough comes up and increases in volume. This will take from 1 to 1.5 hours.
- Put the dough on the work surface and gently knead. Divide the dough with a knife into 16 equal parts.
- Roll each piece into a ball. You will get 16 balls.
- Using a rolling pin, roll the ball into an oblong cake.
- Put a teaspoon of thick jam or jam on the top edge of the cake and cover it with the edge of the dough, pressing the edge firmly with your fingers.
- On the remaining cake test, make incisions (5-6 pieces), but do not cut to the end of the test.
- Starting from the edge with jam, wrap the dough in a bagel. Turn the bagel slightly in the shape of a crescent and put on a baking sheet covered with parchment baking paper.
- In this way, form the remaining bagels and place them on a baking sheet. Leave the formed bagels in a warm place for proofing for 20-25 minutes.
- Separate the yolk from the protein and combine the yolk with milk (1 tablespoon). Using the silicone brush, coat the dough pieces evenly with the resulting mixture.
- From above, if desired, you can sprinkle bagels with poppy seeds or sesame seeds.
- Place the baking sheet in the oven preheated to 190 degrees, and bake bagels for 25 minutes until a light golden color. Slightly cooled bagels on kefir with jam inside, serve with milk, tea or compote. Cocoa and coffee with milk are also suitable for such pastries.
