Step cooking
- Before starting kneading the dough, send 150 g of butter to the freezer for 30-60 minutes. Instead of butter, you can use margarine, but this will adversely affect the taste of the finished baking.
- After this time, sift 180 g of flour into a deep bowl, add ¼ tsp. salt, mix. For any baking, it is recommended to sift the flour 2-3 times. Then it is well enriched with oxygen, baking is airy. Use the highest quality flour for this recipe.
- We get 150 frozen butter and rub it into a flour on a coarse grater. To make it convenient to work with oil, roll it in flour, and do this constantly during rubbing. Pour the grated oil with flour, so that one lump does not form from it. Speed is important in this recipe, so knead the dough and work with it as quickly as possible, your task is to prevent the butter from melting.
- Add 150 g of cottage cheese and quickly grind all the ingredients into crumbs. The best cottage cheese will be homemade. But you can buy a store of any fat content. The main thing is that it is fresh, has a pleasant aroma.
- We drive one egg into a separate dish, shake it to get a homogeneous mass. We make a hole in the crumbs in the middle and drive in an egg, knead the dough with our hands. We are also doing this very quickly.
- As a result, we get a homogeneous com. If the finished dough is too soft, add another tablespoon of flour. The consistency of the test will depend on the size of the egg and the fat content (moisture) of the curd. If you use moist cottage cheese, it will be enough to add only egg yolk.
- Wrap the finished dough in cling film or put it in a bag and send it to the refrigerator for at least two hours. After this time, we take it out, cut off half, wrap the rest again in a bag and send it to the refrigerator.
- Sprinkle the working surface with flour, roll out a layer with a thickness of about 3 mm, divide into eight equal triangles.
- We cut the edge of each triangle in the middle and roll the rolls, starting from a wide edge, heading towards a narrower one. If desired, inside you can put the filling. It can be sweet and savory. For the filling, any fruit jam, boiled condensed milk, fresh berries are suitable.
- We form bagels from the whole dough and put them on a baking sheet covered with parchment paper. We cover the baking sheet with bagels with parchment and send it to the refrigerator for half an hour. In general, they can be left in the refrigerator for a longer period. For example, in the evening to form blanks, and bake in the morning.
- About 20 minutes before baking, turn on the oven 200 degrees, let it heat. Then we put in the oven a baking sheet with bagels and bake for 25 minutes. During this time they will brown, and the pleasant smell of baking will spread throughout your kitchen.
- We take the finished bagels out of the oven, put them on a flat dish, sprinkle with powdered sugar and serve with tea or any other drink.
