Step cooking
- Risotto is cooked very quickly, about 20-25 minutes, but some components must be prepared in advance, for example, a broth. The broth plays a huge role in the recipe, so you need to make it the best of the best, adding spicy spices. The broth can be cooked on fish, chicken or other type of meat. We will cook on the chicken. To do this, wash 400 g of chicken under running water, clean from excess fat and remove the film. Then cut into large pieces and put in a pan. Pour 1 liter of cold water into the same pan.
- Add spicy spices, salt to taste and 100 g celery root. Peel, cut 1 carrot, onion and 1 sweet bell pepper and put in our broth too. From spices, you can add saffron, rosemary, thyme, black peppercorns, bay leaf. Send the pan to the stove and cook with a light boil for 40-45 minutes.
- After time, remove chicken meat from the broth. Strain the broth through a sieve and return to the stove. Bring to a boil, cover and remove from heat.
- Cut the chicken into small pieces.
- Pour 1 tbsp into a heated pan. l vegetable oil, on which we fry 2 pcs. finely chopped onion. Fry the onion until transparent, it should not change its color.
- Pour rice into the pan. Several types of rice are ideal for risotto. For example: arborio, carnaroli and vialone, but you can take a simple one.
- Periodically you need to interfere with rice.
- After 3-4 minutes, pour 90 ml of wine.
- When rice absorbs all the wine, pour in 1 soup ladle of the broth.
- After 15 minutes, put the chicken into the pan and pour in the remaining broth, which we previously filtered.
- We wait another 5-6 minutes until the rice completely absorbs the broth. If the rice remains firm, add another ladle of hot broth.
- Feel free to add 30 g of butter and 50 g of grated parmesan. You can replace parmesan with any other hard cheese.
- Stir in the risotto before serving, place in portions and grate a little hard cheese.
