Step cooking
- We peel one small shallot onion and cut into small cubes. In a stewpan with a thick bottom, pour 3 tbsp. l olive oil, add the onion and lightly fry, stirring constantly.
- Pour 200 g of Arborio rice into a stewpan and fry for 1-2 minutes, stirring constantly. Pre-rinse rice is not necessary. The peculiarity of risotto is the stickiness of rice. It is very important that the rice is completely saturated with oil. Be sure to ensure that it does not burn.
- Pour 100 ml of dry white wine into rice, mix and leave over medium heat until the alcohol evaporates.
- After that, pour 200 ml of clear chicken stock and cook until thickened, stirring constantly. Part of the broth will evaporate, and part will absorb rice.
- Then add another 300 ml of chicken stock and, stirring constantly, cook for 3-4 minutes. Add 50 g of green peas to the rice and mix. Salt and pepper to taste. Constantly stirring, cook another 4-5 minutes.
- Then pour another 300 ml of chicken broth and, without ceasing to stir, cook until tender. Remove the finished rice from the stove and set aside.
- Next, we need 12 medium-sized shrimp. You can take fresh or frozen. Shrimp need to be cleaned of tails, heads and entrails.
- Lubricate the pan with a small amount of vegetable oil. You can use oil spray. Put peeled shrimp on a preheated pan and fry on both sides until golden brown.
- We spread the risotto in a portioned plate and decorate the fried shrimps on top, spreading them in a spiral or in a circle. Before serving, the dish can also be decorated with chopped herbs, sliced cucumber or tomato, halves of cherry tomatoes, sprigs of greens or lettuce. This dish is perfect for everyday lunch or dinner, but it can also be prepared for a special occasion. Enjoy your meal.
