Ingredients
- Champignons - 15 amount
- Rice for risotto (or arborio) - 250 g
- Vegetable broth - 500 ml
- Butter - 20 g
- Olive oil - 3-4 tbsp. l
- Celery - 0.5 pcs.
- Onions - 0.5 pcs.
- Salt to taste
- Italian herbs to taste
- Ground black pepper to taste
- Garlic 1 clove
- Hard cheese 40-50 g
Step cooking
Mushroom cooking
- Rinse and dry the champignons. Update the cut on the leg. Risotto will need about 15 medium mushrooms.
- Cut the mushrooms into slices.
- Put a wide frying pan with high sides on the fire and heat it well. Put 20 grams of butter and 1-2 tablespoons of olive oil (or any other vegetable oil) into the pan.
- Put chopped mushrooms in a pan. Salt and pepper them a little, add a pinch of Italian herbs. Add spices to taste.
- Fry the mushrooms until golden brown. After this, remove the mushrooms from the heat and transfer to a separate plate.
Making risotto
- Peel and rinse onions and celery. Chop half the onion and half the celery finely.
- In the same pan on which the mushrooms were fried, add a little vegetable oil and send the onions and celery to be strained.
- Heat approximately 500 milliliters of vegetable stock in a saucepan.
- When the vegetables are clear, peel 1 clove of garlic, chop it with a garlic press and place in a skillet.
- Rice for risotto (or Arborio rice) rinse under running water. Transfer 250 grams of rice to the pan. Then add 2 scoops of hot vegetable stock to the rice. Stir rice until it has absorbed the entire broth.
- After that, add 1 more soup ladle and stir until the liquid boils away. Add the broth to the rice several more times until it is ready. This usually takes about 15-20 minutes. Add mushrooms to rice and mix thoroughly.
- When the rice is cooked, remove the pan from the heat, cover it with a lid and let it sit for 5 minutes. During this time, grate 40-50 grams of hard cheese on a coarse grater. After this time, add the grated cheese to the risotto and mix.
- Check if there is enough spices in the dish. Also, if the consistency of rice seems too thick, add some more broth.
- When serving, pour risotto with a little olive oil. The dish is ready. Enjoy your meal!
