Step cooking
- First, boil 100 ml of water in a teapot and lay out 40 g of raisins in a separate bowl. If you do not like raisins, then you can not add it. Pour raisins with boiling water, leaving it to stand for several minutes. We put the stewpan with a thick bottom on the stove, including medium heat. We spread 30 g of butter in a saucepan. We are waiting for it to melt a little. To make the butter melt faster, it is recommended to stir it with a spatula.
- Rinse in advance under running water several times 60 g of round rice. Add it to the stewpan to the completely melted butter. Fry rice over medium heat for 3-4 minutes. During this time, it should turn a little yellow.
- To lightly fried rice, pour 250 ml of milk into the stewpan. It is recommended to choose a fatter product. Boil rice in milk for about 7 minutes over medium heat.
- While rice is boiled in milk, we separate the proteins from the yolks. Stack them in separate deep bowls. In total, you need 2 chicken eggs to make rice pudding. Add a pinch of salt in a bowl with proteins and beat them with a mixer in a lush mass. First beat slowly, then faster.
- Leave whipped whites for a while. Meanwhile, in a bowl with yolks, add 1 tbsp. l regular sugar and 1/2 tbsp. l vanilla. Beat with a mixer until the yolks turn white.
- In the hot boiled rice we introduce beaten yolks and mix everything thoroughly. The mass should slightly thicken and acquire a creamier structure.
- We take out the soaked raisins from the water and put them on a paper towel to eliminate excess moisture. Add lightly dried raisins to the rice mass, stirring a little for even distribution.
- In the rice mass, gradually mix the whipped protein. This must be done carefully so that the mass remains soft and airy. We spread the blank for rice pudding in a baking dish, which was previously greased with a piece of butter.
- Preheat the oven to 170 degrees and set to bake rice pudding for 25 minutes. After 25 minutes, the rice pudding is completely ready. It turns out with a beautiful, golden brown crust. Serve this dish for breakfast, cold or hot. Pudding can be sprinkled with powdered sugar on top, then it will become even sweeter.
