Step cooking
Thai dishes with fried rice differ from Chinese in that they are based on a jasmine rice variety that is grown only in Thailand, and long-grain varieties are used in Chinese.
Cooking rice
- We put 540 ml of water in a pan to boil, salt to taste. Rinse Jasmine is not necessary, it needs to be boiled in a large amount of water, in a ratio of 3: 1. Pour rice into boiling water.
- Cook for 10-12 minutes. (no more), we check the taste. We discard the rice in a colander and rinse with warm running water.
We prepare vegetables and meat
- Peel the carrots, onions, garlic from the peel. Cut carrots and bell pepper into cubes (about 1x1 cm). Finely chop the garlic, basil, green onion, dice the onion. Chilli can be finely chopped or added whole at the end of the main course.
- On a strong fire, set the pan with vegetable oil to warm up (1 tbsp. L.).
- Cut the fillet into pieces about 3x3 cm. Spread the meat in a pan, fry for 2-3 minutes. until golden crust appears, stirring with a spatula. We shift into a plate or bowl. We clean the pan.
Cooking the main course
- On a strong fire, set the pan with vegetable oil to warm up (1 tbsp. L.). Fry, stirring with a spatula, onions and carrots for 1-2 minutes. Add the bell pepper, garlic and ginger to the pan, break the egg to them. Fry for another 2 minutes, stirring.
- We send chili peppers, chicken, onion, basil and rice to vegetables. Pour 30 ml of sesame oil, 30 ml of soy sauce, sprinkle 1 tsp. sugar, mix. Warm up for 1 min.
- Pour into a serving dish and immediately serve.
