Step cooking
Prepare the products
- Wash thoroughly 100 g of long-grain rice with running water. Pour the washed cereals into a small saucepan. Pour 200 ml of bottled water there and add 2 pinches of salt. Cook rice until cooked. On average, it will take about 20 minutes. We discard the finished rice in a colander and let the excess liquid drain.
- Cut the carrots into small cubes. Finely chop the half of the onion with a sharp knife. Crush two cloves of garlic with a knife blade, and then finely chop. Ginger in the amount of 20-40 g is cut into thin plates. Adjust the amount of this component yourself, and remember - the more ginger, the more spicy the dish will turn out. We cut the lime into two parts, then gently squeeze both halves in the hands and for now lay the citrus aside.
We are preparing the product
- We put the pan on a large fire and heat it very much. This is a very important point in the preparation of this dish. Pour 30-40 ml of sesame oil into the pan and wait for it to boil. Instead of sesame oil, you can use butter, olive or sunflower refined. It is important that the oil does not have a specific pungent odor.
- Put the chopped onion on the hot oil and fry it for one minute, stirring vigorously. After a minute add carrots, ginger and garlic. Fry the ingredients for a couple of minutes, without stopping for a second to stir them.
- On top of vegetables, lay out 15-20 pieces of shrimp and immediately squeeze the juice from half of the lime on them. On top of all the components, we break one chicken egg, and without wasting time, mix the mass very quickly so that the egg does not have time to “clutch”.
- Sprinkle the resulting mass with 5-10 g of chili pepper flakes. We send cooked rice there and fill in all 20-30 ml of soy sauce. In this recipe, along with soy sauce, the use of fish is encouraged. Stir the mixture well and fry it for 20-30 seconds with active and constant stirring. Last add 30-50 g of peeled peanuts, stir and continue roasting for another minute.
The final stage
In a deep, small dish we spread the prepared dish. Squeeze juice from the second half of lime directly on top of rice with shrimp. At the top of the dish we put 2-3 leaves of fresh mint. If there is no mint, it can be replaced with fresh cilantro or parsley. Sprinkle the product with black pepper and serve with chopsticks.
