Step cooking
- Peel the onion (1 piece) and cut into small cubes.
- Peel and finely chop the garlic (1-2 cloves). It is still better to chop the garlic, and not pass through the press.
- Wash the cherry tomatoes (250 grams), allow to drain the water and cut them into 2 halves.
- Place the pan on the stove and heat. Pour olive oil (3 tablespoons) into a preheated pan.
- Put the ground beef (350 grams) in a pan and fry it over medium-high heat for 3-4 minutes.
- When the meat changes color, add chopped onions and garlic to it. Mix well.
- Add spices to the minced meat: zira (1 teaspoon) and ground cayenne red hot pepper (1 teaspoon or to taste). Stir so that the spices are evenly distributed. Cook the minced meat for another 2-3 minutes, stirring occasionally. Place the cherry tomatoes in two in a pan. Add canned corn (100 grams) and red canned beans (150 grams). Add canned vegetables without liquid, only one grain. Stir so that everything warms up evenly.
- Salt and pepper with freshly ground black pepper to taste. Shuffle.
- Reduce the heat to medium or slightly less than average and put rice (200 grams) washed in several waters in a pan.
- Add pure water (400 ml) and mix so that the rice is evenly distributed over the pan.
- Leave the contents of the pan to cook for 15 minutes. Do not bother or turn anything upside down at this time. Focus on the degree of rice preparedness, and if the rice is not ready yet, and the water has already boiled, then add some more water. Cheddar cheese (50-60 grams) grate on a coarse grater.
- Peel and cut avocados (1/2 of the fruit) into small pieces.
- When the rice is ready, turn off the stove and sprinkle the contents of the pan with grated cheese. Cover and wait for the cheese to melt.
- Mexican rice with beans and vegetables is ready.
Decoration methods and serving options
Put the prepared Mexican rice with beans and vegetables on the serving plates immediately after cooking. Sprinkle the dish on top chopped into small pieces of avocado and garnish with a sprig of fresh herbs or basil leaves. Delicious, fragrant rice with beans serve hot for dinner or lunch.
