Ingredients
- Potato broth - 500 ml
- Dry yeast - 4 tsp.

- Eggs - 3 pcs.
- Vanilla sugar - 2 tsp.
- Butter - 200 g

- Wheat flour - 1.6-1.8 kg

Dough and filling
- Pour 500 ml of potato broth into a bowl. Add 4 teaspoons without a slide of dry yeast to the broth.
- Then pour 10 tablespoons into the bowl without the top of granulated sugar.
- We mix these ingredients with a whisk, let the yeast dissolve within 2-3 minutes.
- In a separate small salad bowl we break 3 chicken eggs, after washing the eggs under the tap. Add eggs to a bowl with liquid ingredients.
- Melt 200 grams of butter in a microwave, put it in a bowl.
- Immediately add 3 teaspoons without a slide of salt. Mix with a whisk.
- Now sift the wheat flour through a sieve and add it gradually to the bowl. Knead the dough. We need flour a little more than one and a half kilograms.
- You can knead the dough with your hands or in a bread machine. It should be soft, elastic and not stick to your hands.
- We cover the bowl with the dough with cling film and send it to a warm place for two hours.
- While the dough is resting, we will prepare the filling. 150 grams of dried apricots pour boiling water for 15-20 minutes, then drain the water, and cut the dried apricots into small cubes.
- Add 2-3 tablespoons of apricot or apple jam - the first filling is ready.
- The second filling will be curd. Place 300 grams of cottage cheese in a salad bowl, add 1 small egg and 3 teaspoons of sugar. Mix the ingredients well until smooth. Add 2 handfuls of well-washed raisins and 1 teaspoon of vanilla sugar. Mix everything thoroughly - the second filling is also ready.
- 2 hours passed, the dough came up. We spread it on the working surface, divide it into 3 parts. We will form baking.
Svatushki (buns with dried apricots)
- Divide the dough into equal parts, about 16 parts. We roll out one part with a rolling pin, with a spatula for the dough we make a small incision on one side of the cake.
- In the middle of the cake, lay out a spoon of the filling of dried apricots and jam.
- We stretch the notched side into the hole, wrap the edges.
- The product is ready. We spread the buns on a baking sheet covered with parchment paper.
- In a small salad bowl, beat one egg with milk with a fork, grease the buns on top with a kitchen brush and let them stand for 15 minutes.
Buns with poppy seeds and sugar
- The second part of the prepared dough is divided into 6 equal parts. We roll each piece into a cake.
- Grease each with olive oil, sprinkle this cake with a little sugar, and then poppy seeds.

- When we have formed all the cakes, put the filling of cottage cheese and raisins in each of them, press down the filling a little with a spoon.
- Then grease the top of the cheesecakes with the egg mixture. Let the cheesecakes come up for 15-20 minutes while the buns are baked in the oven.
- After this time, we take out a baking sheet with buns from the oven, and there we send a baking sheet with cheesecakes. Bake for 15-20 minutes at a temperature of 180 degrees.
Roulade with cottage cheese and raisins
- From the remaining dough we form a fairly thin cake, put the remaining stuffing from the cottage cheese with raisins on it, wrap the roll, tightly pinch the edges.
- We spread the roll on a baking sheet, with a sharp knife we make cuts, as on a loaf.
- Also, lubricate with a mixture of milk and eggs, let the roll come up while cheesecakes are baked.
- Bake for 15-20 minutes at a temperature of 180 degrees.
