Step cooking
Prepare the fish
- We carefully wash the mackerel in the amount of two pieces under running water, and then wipe it with a paper towel. We cut off the head, fins, and then make a longitudinal incision along the abdominal cavity and carefully remove the offal. In a convenient way, we separate the mackerel fillet from the bone.
- We rinse the fillet with running water and allow the excess liquid to drain, then wipe it again with paper towels. If desired, the fillet can be cut into pieces with a thickness of 3 to 5 cm, or can be used whole.
Pickle fish
- Separately, mix 20 g of sea salt, 10 g of granulated sugar and 30 g of seasoning for fish. If you did not have seasonings for fish on hand, then replace it with a mixture of such spices: fennel, anise, basil, coriander, thyme, sage. The amount of these spices adjust yourself, focusing on your own taste.
- Lubricate the fish fillet liberally with a spicy mixture on all sides.
- We spread the processed mackerel in a glass container and leave it in this form for at least half an hour so that it is well pickled.
Pickle the onion
- Peel one large onion from the husk, then rinse thoroughly. Cut the onions into half rings of medium thickness.
- Separately, mix 10 g of sea salt, 5 g of granulated sugar and the desired amount of ground black pepper.
- Squeeze the juice from half a lemon and, if necessary, filter it through cheesecloth or a fine sieve. Pour 20 ml of olive oil and lemon juice into the dry mixture, then stir everything thoroughly. Pour the chopped onion with the resulting sauce, then distribute it evenly.
- Sprinkle the onion with a mixture of salt, sugar and pepper, mix. We leave the onions in a warm place, where we allow them to marinate until we fry the fish.
Fry fish
- We heat the pan, then pour 20 ml of vegetable oil into it.
- Separately, pour 100-150 g of wheat flour, in which we carefully roll the pickled mackerel fillet.
- We spread the fish on hot oil and fry on both sides until a golden crust appears. It will take 3-4 minutes to fry each side.
- Put the fried fish on a clean plate.
- On top of it, carefully lay out the pickled onion half rings.
