Ingredients
- Chicken (drumstick) - 500 g
- Purified Water - 2.5 L
- Potato - 500 g
- Carrots - 1 pc.
- Onions - 2 pcs.
- Cream cheese - 200 g
- Butter - 1-2 tbsp. l
- Green onion - 0.5 bunch
- Parsley - 0.5 bunch
- Salt to taste
- Ground black pepper to taste
- A mix of Italian herbs to taste
- Bay leaf - 1-2 pcs.
Step cooking
- If we use processed cheese in briquettes, then it must first be put in the freezer. Put the chicken pieces in the pan. Pour in cold water and set on fire.
- Bring to a boil over high heat. Remove the resulting foam with a slotted spoon.
- We clean one onion, cut it crosswise and add to boiling water. There we add a bay leaf. Reduce the heat so that the water boils slightly. Cook chicken for 25-30 minutes.
- Meanwhile, peel and cut the potatoes into small cubes.
- We clean and finely chop the remaining onion head.
- Peel and grate the carrots.
- Put the frying pan on the fire, add and melt the butter.
- Pour onion and carrots into the heated oil. Stirring, fry for 7-8 minutes, so that the onions and carrots are slightly browned.
- We take out the onion head from the broth.
- Add potatoes to the pan.
- Salt and pepper the soup to taste. Bring the water to a boil and cook the potatoes 5 minutes from the moment of boiling.
- Add the fried onions and carrots to the pan.
- Bring the mixture to a boil and add cream cheese. If we use cheese in packs, then it must be removed from the freezer and grated, and then added to the pan.
- Mix everything well so that the cheese is completely dissolved.
- When the soup boils, try and add salt and pepper to taste, if necessary. Add a mixture of Italian herbs to taste.
- We cover the pan with a lid and cook the soup on low heat for another 10 minutes. At this time, finely chop the onion and parsley.
- Turn off the heat, add the onion and parsley and let the soup brew before serving.
- Pour the finished soup into plates and serve hot. Enjoy your meal!
