Step cooking
- Cook the broth. Pour 1.5 l of water into the pan and bring to a boil.
- Wash the roots of galangal and ginger, cut into slices 2-3 mm thick and send to boiling water.
- Peel 300 g of raw shrimp from shells. Add shells to the future broth.
- Remove the zest from kafir lime and also add to the broth.
- Boil the broth for 30-40 minutes.
- Strain through a sieve, and return the liquid to the pan.
- Oyster mushrooms cut into strips of about 5 mm, you can just tear them by hand.
- Peel 50 g of carrots and cut into cubes about 1 cm.
- Peel the purple onion and cut into large pieces of 25 g.
- Be the first to add chopped mushrooms and carrots to the pan with strained broth. Bring to a boil and boil for 2-3 minutes. In the process of preparing the soup and adding the remaining vegetables, the soup should boil slightly.
- Next, add 0.5 tbsp. l palm sugar and 5 g chopped chili peppers.
- Add 2 tbsp there. l with top pasta tom yum.
- When the paste dissolves, pour in 6-10 tbsp. l fish sauce and about 0.5 tsp. salt.
- Squeeze juice from kafir lime and ½ regular lime.
- Add chopped purple onions, kafir juice and regular lime to the soup.
- Rinse 5 pcs. cherry tomatoes, cut in half and add to the soup.
- Next add 3 tbsp. l coconut milk and previously peeled shrimp.
- Once the shrimp has turned pink, remove the soup from the heat.
- Serve the finished tom yum with fresh, chopped cilantro.
Cooking recommendations
- Instead of water, you can take chicken stock.
- Thais cook tom yam with lemongrass. If you have this lemon grass, add it to the broth.
- Oyster mushrooms can be replaced with champignons.
- In the case of adding fish sauce, focus on your taste. If the taste of fish sauce is already enough for you, but there is no salt yet, salt with ordinary salt.
- Instead of fresh, you can use boiled shrimp, in which case you need to add them at the very end and immediately remove the soup from the heat.
