Step cooking
- Take 450 - 550 g of mutton (preferably young), cut the films, veins and fat from the meat. Cut into small pieces.
- Put the lamb in a pan, fill it with water and put on fire. After the meat boils, it is necessary to reduce the fire and remove the resulting noise with a slotted spoon. After that, cook the mutton until fully cooked: 1 - 2 hours, depending on whether the young mutton or not.
- Prepare a vegetable dressing: peel and chop the onion (2 pcs.).
- Peel and grate 1 carrot.
- Sweet pepper (1 pc.) Wash, peel and cut into cubes.
- Melt the mutton fat in a pan, which was cut from the meat. Add onions, carrots. While stirring, bring to a soft condition.
- Add sweet pepper, 60 g of tomato paste and mix.
- Add 70 g of tkemali sauce. By the way, if necessary, instead of tkemali sauce, you can use lemon, tomato or pomegranate juice. Stir again and remove the vegetable dressing from the heat.
- Grind 80 - 120 g of peeled walnuts with a rolling pin into small crumbs.
- Wash and finely chop a bunch of cilantro.
- Take the cooked meat out of the pan, filter the broth with a fine sieve. Put the meat back into the broth and add 90 - 120 g of rice. For cooking kharcho, it is better to use long white rice. Before cooking, you need to fill it with cold water and leave for about 2 hours. Otherwise, the soup may turn out muddy.
- After 9 - 11 minutes add vegetable dressing, chopped nuts, 1 tsp. ground red pepper. If you like very spicy dishes, then use hot red pepper during cooking. However, it must be used carefully so as not to get burns. Use rubber gloves when handling it.
- Add salt and hops to your taste. Do not forget about finely chopped cilantro. Georgian dishes, especially the first ones, always use a lot of greens and seasonings. For example cilantro, suneli hops, parsley, coriander, basil. You can change the spices to others to taste.
- Cook another 5 - 7 minutes, and the delicious, rich lamb kharcho soup is ready, you can serve it to the table, decorating with fresh herbs.
