Ingredients
- Water - 475 ml
- Sugar - 1.5 stacks.
- Raspberry syrup - 100 ml
- Blackcurrant Syrup - 100 ml
- Lemon juice - 1 tbsp. l
- Corn starch - 1 stack.
- Vanilla Extract - ½ tsp
- Roasted Peanuts - 100 g
- Powdered sugar - ½ stack.
- Sunflower oil - 0.5 tbsp. l
Step cooking
- Pour 1.5 cups of sugar into a liter pan, pour 100 ml of water, 100 ml of raspberry syrup, 100 ml of blackcurrant syrup and 1 tbsp. l lemon juice, and put on a container over medium heat.
- Constantly stirring with a whisk, we wait for the sugar crystals to completely dissolve, and when the syrup boils, then reduce the heat to a minimum, use a slotted spoon to collect the foam and leave the syrup to boil.
- We take a 3-liter pan, pour 1 cup of corn starch into it, pour 375 ml of ice water, stir well with a whisk until smooth and put the pan on a small fire.
- With constant stirring, bring the mixture to a thick state resembling custard, then turn off the heat.
- We check the readiness of the syrup, for this we drop it in ice water, and if the drop turned into soft caramel, you can turn off the fire.
- Without stopping stirring with a whisk, pour the syrup into a starchy mass in a thin stream until a jelly-like mass is obtained.
- We put the pan with the resulting mass on a small fire and with continuous stirring, boil it for 20-30 minutes, until the mass becomes a smooth and elastic paste.
- Add to the mass ½ tsp. vanilla extract and 100 g of roasted peanuts, and mix thoroughly.
- We cover the round container with a piece of cling film, grease the top with a brush of 0.5 tbsp. l vegetable oil, then spread our mass with nuts, smooth and leave for 7-8 hours, so that it freezes.
- After 7-8 hours in a deep bowl, we mix 0.5 cups of powdered sugar and 0.5 cups of corn starch, then pour out 1/3 of this mixture onto the work surface in an even layer and gently shake out the solidified mass from the mold. Sprinkle another 1/3 of the mixture on top of the layer, and carefully level it on the surface.
- With a knife, we cut the layer into 2 × 2 cm portion cubes, then each roll in the remaining part of the mixture, put it on a small dish and serve.
