Step cooking
- In a saucepan, mix 125 grams of milk and 200 grams of pure cold water. We put on the fire and bring to a boil. Add 5 grams of powdered sugar or sugar, 100 grams of soft butter, 2-3 grams of salt and 1 gram of vanilla extract to the stewpan.
- Remove the stewpan from the heat, add 150 grams of wheat flour. Mix quickly and set on fire again. We do everything quickly, otherwise the dough will not work.
- When the dough has become homogeneous, turn off and leave to cool.
- Break three chicken eggs and add to the dough. Separately, yolks and separately squirrels. So the dough mixes better and acquires an excellent consistency.
- Place the finished dough in a pastry bag.
- We cover the baking sheet with parchment paper and plant future profiteroles on it.
- Preheat the oven at 200 degrees Celsius, and set the pan for 18-20 minutes.
- Cut into small pieces 100 grams of dark chocolate.
- Put the chocolate in a deep bowl and put in a water bath. Add 15 grams of liquid honey and 15 grams of butter to the chocolate. Mix well until smooth.
- Remove the chocolate sauce from the stove and add 60 grams of warm milk to it. Mix again until smooth.
- Pour 250 grams of cold cream 33% into a deep container, add 45 grams of powdered sugar and 2 grams of vanilla extract. Beat with a mixer to a thick cream.
- We shift the cream into a pastry bag. We completely fill the finished profiteroles with cream so that it goes a little back.
- We add dessert to the hill, if desired, sprinkle with powdered sugar and pour over chocolate sauce.
Decoration methods and serving options
- In addition to the cream that you are offered in the recipe, you can use other filling options. For example, fill your dessert with berry, custard, cream, ice cream and boiled condensed milk with butter.
- Lay out profiteroles with a slide, pour with chocolate, caramel or other sweet sauce, and serve.
