Step cooking
- 10 - 15 branches of purslane should be washed well under running water. You can take more twigs, as when cooking, it decreases in volume. It is advisable to choose young plants, they will be softer and tastier.
- We put the pan on the stove, pour cold water and bring to a boil.
- While the water is boiling, prepare a salad dressing. To begin with, in a small bowl, rub on a fine grater 2 - 3 cloves of garlic, you can skip the garlic through a press or cut with a knife. The amount of garlic can be reduced or increased, see to your liking.
- Next, squeeze 2 to 3 tbsp of garlic. l lemon juice. Instead of lemon, you can use any vinegar: apple, wine or ordinary.
- Add black ground pepper and salt to taste. At this stage, you can experiment and add any spices and seasonings to your taste.
- Then pour 2 - 3 tbsp. l olive oil and 1 - 2 tbsp. l oils from pumpkin seeds. You can use absolutely any oil, and it is not necessary to add two types, a simple vegetable oil is quite suitable. Mix the dressing well and let it stand and insist.
- Let's cook the purslane. Add salt to boiling water and lower all the branches so that they are completely covered with water. Bring the water to a boil and cook for 7 minutes. If the purslane is very young and its stems are thin, then you need to cook the plant for 4 to 5 minutes.
- Carefully remove the finished purslane from the water with a slotted spoon and let it cool.
- Finely chop the greens: 2 branches of parsley, 2 branches of celery leaves and 1 branch of lovage. A lovage is a perennial herb that has an unusual taste: at first it is sweetish, then a sharpness with a slight bitterness is felt, it is very useful to periodically include this plant in the diet. For this salad, any greens are suitable.
- Cooled purslane cut into small pieces, transfer to a deep bowl.
- Fill with dressing and add chopped greens, mix.
- Put the finished salad on a dish or in a salad bowl, sprinkle 1 - 2 tbsp. l light sesame seeds and serve. Enjoy your meal!
