Step cooking
- So, if you became the happy owner of a celery bush, then first of all, rinse it under running water and cut the spine. Also separate the petioles (stem part) from the leaves. Rinse the leaves especially thoroughly, and put them to dry on an ordinary towel, or, if there is, on a dryer for greens. The towel can be changed after a couple of minutes, so the leaves will dry faster.
- While greens and petioles are drying, boil one or two chicken eggs. To do this, put a saucepan with eggs on the fire, bring to a boil and cook for 10 minutes. The eggs must be hard boiled. Then fill with cold water for at least 10 minutes. Peel the onion and rinse it under running water.
- Take 2-3 petioles of celery (depending on the variety and length of the stems) and peel them from the top thinnest film - it is stiff and dense. You can use a knife, but you can peeler.
- Cut the stalks into strips, although the shape will look more like a half-ring. Transfer to a salad bowl.
- Cut the onion in half and cut into thin half rings. Complete them with salad.
- Cut the egg (or eggs) into medium cubes and send it to the salad bowl.
- Salt the salad and add a pinch of the mixture of peppers and the mixture of herbs. Mix everything. Add a couple of tablespoons of mayonnaise and stir again. As for mayonnaise, of course, it adds calories to this very healthy salad. Therefore, if the benefits and dietary properties of the salad are important to you, then replace the usual table mayonnaise with lighter, or even sour cream, kefir or unsweetened yogurt.
- Let the salad stand for a while, on top you can decorate with celery leaves.
- While lettuce is infused, peel the remaining celery stalks. Cut them in the same way as for the salad. Celery leaves must be dry. Cut them the way you like. Alternatively, you can make two blanks: one with coarsely chopped leaves, the other with finely chopped. Free the work surface and spread the cling film on it. Put the chopped celery leaves closer to one of the edges.
- Wrap in a film, squeezing from the sides, in the form of sausage. The tighter you get, the better. When the time comes and you need celery greens, you will take out a “sausage”, cut off the desired amount with a knife, and tighten the edge with a new piece of film.
- Wrap chopped celery stalks in the same way. Fold the “sausages” in the freezer in the coldest place, in the quick freezing department. Now return to the delicious celery salad and enjoy it to the full!
