Ingredients
- red cabbage - 300 g
- onions - 1 pc.
- dried prunes - 50 g
- mayonnaise - 40 g
- freshly squeezed lemon juice - 40 ml
- parsley - 5 branches
- table or sea salt - 2 pinches
- granulated sugar - 20 g
- ground black pepper - optional
Step cooking
Prepare the products
- First, pickle the onions. We peel the onion from the husk, rinse with cold water, and then cut into the thinnest half rings. To prepare this salad, it is best to use table onions of either white or blue variety.
- We send the chopped onion into a deep bowl and add 20 g of granulated sugar and 40 ml of lemon juice to it. The use of wine vinegar is quite acceptable, but it is preferable to add lemon or lime juice: acid of natural organic origin will give the onion a special pleasant taste that cannot be achieved with vinegar.
- Stir the ingredients thoroughly and gently ram the onion mass. We cover the bowl with the lid and set the onion aside, allowing it to marinate well for 12-15 minutes.
- Meanwhile, pour 50 g of dried prunes with hot water, the temperature of which is not more than 70 ° C. Cover the dried fruit with a plate and leave it in this form for 10-12 minutes. After the specified time, drain the water and thoroughly rinse the prunes with running cold water. As a result, dried fruits will be clean and soft at the same time.
- We take red cabbage and finely chop it with a sharp long knife. We will need 300 g of chopped product.
- Put the chopped cabbage in a bowl, in which we will prepare the salad.
- In order for the cabbage to be crispy in the salad, it must let the juice go. To do this, salt the red-skinned product with 2 pinches of salt and mix the components well. We cover the bowl with the cabbage lid and leave it in this form for 5-7 minutes.
- We cut the softened prunes into 4x5 mm pieces to make dried fruits feel in the salad.
- Drain the marinade from the pickled onions and squeeze the product a little with clean hands.
Collect salad
- In a bowl with cabbage we send pickled onions and chopped prunes.
- Pepper the ingredients according to your own taste.
- We take 5 branches of parsley and chop them very finely with a sharp knife, then send the product to the bowl with the rest of the ingredients.
- Add to the components 40 g of mayonnaise, and carefully mix the salad. If you like to have more mayonnaise in the salad, then feel free to add the desired amount of this product.
- We shift the cooked salad into a beautiful dish and serve.
