Step cooking
- We fill a small saucepan designed for a family of 4 people with water, put it on a fire, wait for the water to boil. While the water is boiling, rinse the potato tubers with cold water. We take the knife and peel it, wash it again, cut it into cubes of about 1 cm.
- We send potatoes to a pot of boiling water. The fire under the pan is slightly reduced, we give the potato the opportunity to cook not very quickly.
- Now we move on to preparing other ingredients. We clean the medium-sized onion from the husk, wash it, then finely chop it on a cutting board.
- We put a frying pan on the fire, pour vegetable oil there, let it warm up well. I advise you to use refined oil, such as you used before and know that it is of high quality. In no case do not take the oil bought on the market from old traders - it can foam, be bitter, and this confirms the presence of harmful substances and a violation of production technology.
- When we see that the oil has warmed up, add chopped onions to the pan and fry over low heat, stirring constantly.
- We wash the carrots, rub on a fine grater, add to the onion, mix, continue to fry, making a slow fire. For soup, choose sweet, juicy varieties of carrots.
- Wash mushrooms several times under running water, cut into slices. They should not be small, we cut mushrooms with 4-5 plates along.
- We send the mushrooms into the pan, mix and continue to fry until all the water has gone. Champignons can be bought in a supermarket, a vegetable stall, where you always buy vegetables. Pay attention to the freshness of the product was the first, do not buy stale on the shelves, they are visible on brown spots on the surface. If you are an amateur mushroom picker, collect, dry them, are sure that there will be no harm - you can use the collected ones yourself.
- When the mushrooms are ready, spread the sour cream to them, mix, simmer for 2-3 minutes. Use sour cream at your discretion, depending on which, fatty or nonfatty product you prefer.
- Then put all the stewed vegetable ingredients in a boiling pot with potatoes.
- Immediately add the vermicelli, which should be very thin. If this is not the case, try chopping homemade noodles - it goes well with this soup.
- Now do not forget to salt the soup, add to it a bay leaf, a little ground pepper, let it boil for 7-8 minutes at a very low fire. When the soup is ready, the bay leaf can be removed so that there is no saturated smell from it.
- Add chopped fresh herbs to an almost ready dish.
- After a few minutes, the dish can be served.
